They aren't. Dragons aren't assigned a specific sex. They are capable of both. Lard Ass Martin alluded to it in the books.

Yup, looks like they are setting her up to look incompetent as a leader compared to Jon, so when it's time for them to go for the throne Jon would look like a more suitable leader.

People are speculating that the dragons will turn on her in favor of Jon also

There's deliberate emphasis on the theme of breaking the wheel and revolution. NEITHER of them will sit the throne. And I think the words Varys spoke last episode were a harbinger of things to come.
