The whole skin tone thing is subjective.

I'm looking at pics of her dad and he does have a darker skin tone.

It's just a reddish color/undertone as opposed to more Brownish so people may not see him as "dark skinned".
I can see how she'd classify him as dark though. He's darker than her in hue.

It is crazy how I also IMMEDIATELY googled her Dad to see if she was actually Afro-Latina... I don't think her father would really pass as Afro-Latino or black in any Latin American country, so I am a bit confused.
